Can’t wait to try these! I have a non cheese eater in the family, will these work if I leave out the cheese, or perhaps a substitute?

Yes! Highly recommend the cottage cheese, but can substitute Tofu or white bean paste if you want to try that!

Why cornstarch? Other starches? Without starch?

To help it achieve that silky texture. You can certainly make them without the cornstarch, just be careful not to overcook them or they’ll end up rubbery.
