When I mix the breadcrumbs with the milk before mixing with the ground beef, I always end up with knots of the breadcrumb mush in my meatballs... but if I mix it in more, then I get tough meatballs. What's a gal to do?

Allow the breadcrumbs to steep in the milk for 20 minutes and ensure it forms into a smooth paste, without any clumps. Hope that helps!
