Welcome to my new series: Snack Time.
This series will focus on single servings of slow food you can make at home. Any time of day or night. Nothing complicated. Unless you want it to be.
Today we’re combining the essentials of a Greek salad (Cucumber, tomato, onion, olives, feta cheese, oregano and olive oil) with avocado toast. The flavor combination is out of this world!

Greek Salad Avocado Toast
Ingredients:
Slice of sourdough (or your favorite) bread, toasted
1 Haas avocado, seeded, peeled, and large-diced—lightly mashed with salt and fresh lime juice to taste
Red onion, cut into slivers (amount to suit your taste)
1/4 medium Hot house or seedless cucumber, diced
5-6 Cherry tomatoes, halved
1/4 cup, crumbled feta cheese
6-8 Kalamata olives, pitted and sliced into thirds
1/2 tsp Oregano
Olive oil for drizzling
Salt and pepper to taste
Directions:
Place toast on a serving plate and layer ingredients in the order they are listed in the ingredients list above.
Slice in half (optional) and enjoy!
